Turnip Mash

The perfect summer side! Full of delicious creamy flavor, and a little bit lower in starch than mashed potatoes (although we aren’t hating on those either. ;-)

(Serves 4-6)

GATHER:

  • 2 bunches Turnips (Purple Top or Hakurei)
  • 1 stick salted butter  (1/2 cup) or dairy free alternative, melted
  • Salt to taste

METHOD:

  1. Cut off the tops and ends of your turnips. Peel and chop them roughly.
  2. Add turnips to a pot on the stove and boil gently with plenty of salted water (I would add one small palmful of salt) until the turnips are tender when pierced with a fork.
  3. Drain the turnips, and while they are still hot, smash them in a mixer or with a potato masher. Stir in the melted butter and season with salt and pepper to taste.
  4. Enjoy on the side of grilled meat and veggies all summer long!

*Alternative: top with fresh herbs or microgreens for a fun little spin when plating them!*
