Carrot Top Pesto

Don’t throw out your carrot tops! Instead make this delicious and nutritious carrot top pesto! Drizzle on roasted/grilled vegetables, or toss on pasta! It’s so good, even my kids beg for it.

(Serves 4-6)


-1 bunch carrot tops

-1 large handful basil

-4-6 cloves garlic

-1/4 cup Pine nuts

-1/3 cup grated parmesan

-Olive Oil

-Sea Salt



  1. Thoroughly wash your carrot tops and rinse the basil.

  2. Roughly chop the tops and toss in the food processor with the pine nuts, garlic, and parmesan.

  3. Pulse until it forms a paste, meanwhile add olive oil drizzle by drizzle until you get the consistency you want. Add salt and pepper to taste.
