Carrot Top Pesto
Don’t throw out your carrot tops! Instead make this delicious and nutritious carrot top pesto! Drizzle on roasted/grilled vegetables, or toss on pasta! It’s so good, even my kids beg for it.
(Serves 4-6)
GATHER:
-1 bunch carrot tops
-1 large handful basil
-4-6 cloves garlic
-1/4 cup Pine nuts
-1/3 cup grated parmesan
-Olive Oil
-Sea Salt
METHOD:

Thoroughly wash your carrot tops and rinse the basil.

Roughly chop the tops and toss in the food processor with the pine nuts, garlic, and parmesan.

Pulse until it forms a paste, meanwhile add olive oil drizzle by drizzle until you get the consistency you want. Add salt and pepper to taste.
